Taiwanese Pickled Cucumbers

I made some Taiwanese pickled cucumbers last night after I stumbled on the recipe at sleepwalks9to5. I tweaked the recipe a little as I like my pickles sour hence I added about 2 tbsp of vinegar instead of 1 tsp as stipulated on her recipe. I tasted the marinate before deciding that I needed more vinegar. It's very appetizing and refreshing, a great summer snack/ appetizer :D

P/S: I made them at almost midnight and the above photo was taken after they have been pickled for more than 12 hours instead of 2. Hence they looked really pickled and slightly dark due to the soy sauce :P
